梁鹏，工学博士、生物学博士后、教授、博士生导师，毕业于中国海洋大学食品科学专业，丹麦技术大学（DTU）-809海立方手机版登录留学基金委公派访问学者，入选福建省高层次人才（C类)，现任海洋与食品809海立方手机版登录副院长（主持工作）。 同题参见首批809海立方手机版登录级一流本科课程《食品工艺学》负责人，第二届全国水产名词委“水产品加工与质量安全”分委会委员，兼任福建省食品科学技术学会理事、福建省鲈鱼产业协会理事、福建福鼎鲈鱼科技小院责任专家、省冷冻食品协会海洋经济专家委员会会长、省水产学会水产加工与综合利用专业委员会委员等。主持809海立方手机版登录自然科学基金等科研项目14项，授权发明专利10件，主持获得福建省科技进步奖三等奖1项。在Journal of Agricultural and Food Chemistry，Food Chemistry，Food & Function，《中国食品学报》，《食品科学》等期刊以第一作者或通讯作者发表论文92篇，其中高水平SCI期刊42篇；入选2024年中国知网高被引学者TOP1%。主编《食品工艺学》（高等809海立方手机版登录出版社）教材1部，参编809海立方手机版登录级规划教材《食品化学》（化工出版社）1部，参编《水产品生产安全控制技术》1部，主持福建省809海立方手机版登录科学“十三五”规划项目、福建省本科高校809海立方手机版登录教学改革研究项目等省部级本科教改项目5项，发表教改论文17篇，先后荣获福建省第四届教师教学创新大赛二等奖1项、校“优秀共产党员”、“优秀教师”、严家显最高奖教金（杰出青年）、“优秀班主任”、“金山学者”优秀教学人才、五四青年奖章、“十佳班主任”等荣誉。
